Berry Protein Mousse

Ingredients

14 oz. (400g) silken tofu

1 tbsp. maple syrup

8 oz. (225g) frozen berries

4 tbsp. coconut flakes, to serve

Place all the ingredients into a high speed blender and blend until smooth.

Divide the mixture equally between 4 serving bowls/glasses and chill for 6 hours or overnight.

Serve the mousse cold topped with some extra fresh berries.
